The genesis of Succo

At the time of writing this article, Succo is about to celebrate its first anniversary. One year ago, in January 2021, the lemon season began, and with it, the production of Limoncello. The (organic) lemon of the Femminello del Gargano variety is ideal for making Limoncello thanks to the aromas contained in the peel. After zesting tons of them (by hand), a question arose: what to do with all this leftover lemon flesh? At the beginning, to save time, we try to evacuate them by giving them to local bakers for their preparation of lemon pies. But little by little, the idea of creating something ourselves from this juice emerges. We think about it (but not too long). We squeeze some lemons, we add some ginger (because it gives a nice touch), we sweeten the whole with honey (because the big brother François produces some in the garden since years and made his job with a well known beekeeper in the region José Artus).

A few tests later and we have in our hands a little nugget. We didn't know it at the time. It's called the Succo, which translates to juice in English.

Sad to say, but it was cheaper to throw away the lemons than to develop a new product, which might flop and we would have to throw away all the bottles... So we start with a first small batch of 200 bottles, pressed by hand and which will have cost the life of a juicer which will not have kept the pace. RIP to him. After only 10 days, although the product is completely new, the stock is already empty. So, we start again, this time with a bigger machine. We rent an industrial juicer and we increase the production.

The success is there. Thanks to Succo's many advantages, it is quickly adopted. However, as with all fresh produce, there comes a time when it is no longer in season. No more lemons in the trees. Impossible to squeeze lemons. What to do? Go get them in Spain? No. In Argentina? Even less. But it's too bad to stop production too. So, to help us out out of season, we found a supplier of organic lemon juice who squeezes in large quantities and thus has a stock all year round.
